General

Which chocolate do you use?

We make our own dark chocolate bars using 2 ingredients as a starting point – nibs and sugar. We take pride in using Callebaut couverture chocolate for everything else. We also source locally where possible and like to engage with our suppliers and get to know them and the stories behind their products.

How do you flavour your chocolates?

We keep our creations free of artificial flavours, colours and preservatives because we believe that the chocolate and ingredients should stand out on their own. We use natural flavours such as fruits, nuts, locally roasted coffee beans and vanilla bean.

Where are your chocolates made?

All of our chocolates are handcrafted in the Inner West in Sydney.

Why are your chocolates different from supermarket chocolates?

Typically, supermarket chocolate contains vegetable or other oils which are economical in large scale production. As an artisan chocolate creator we dedicate our flavour experience to couverture chocolate which contains cocoa butter. Cocoa butter melts at our body temperature and is the reason why our chocolates have that ‘melt-in-the-mouth’ sensation.

How long will my chocolates keep?

We keep our creations free of artificial flavours, colours and preservatives and they are made using fresh ingredients.  For these reasons, our chocolates with fresh fillings should be devoured as soon as you receive them.  As a general rule, our chocolates with fillings such as our bon bons, truffles, snack bars and the like will last for 7-10 days from purchase but please do check the used by date.   All of our chocolate bars and mendiants have a much longer shelf life as they do not contain water or dairy.

How do I store my chocolates?

Our handcrafted chocolates will remain fresh and retain their delicate flavours and textures if they are kept at a temperature of less than 20 degrees, in a dry atmosphere away from light and strong aromas.

We do not use artificial colouring or titanium dioxide. We encourage any customers with dietary requirements to check the ingredients listed on each product.

Do your products contain alcohol?

The majority of our products do not contain alcohol. If a chocolate does contain alcohol it will be listed in its ingredients list.

Are any of your chocolates dairy free?

We have a dedicated plant based product offering which may be suitable for vegans and those following a plant-based diet, depending on individual requirements and preferences.
