Chocolate Pancakes

Our traditional family recipe for Shrove Tuesday

Ingredients for 10-12 pancakes

  • 3 cups plain flour
  • 2 cups milk (plus a little more if batter looks too thick)
  • 2 eggs
  • 1/2 cup of neutral oil (like sunflower, vegetable or grapeseed)
  • 3 teaspoons baking powder
  • Chocolate chips as desired
  • 1/2 teaspoon vanilla extract or paste (optional)

How to

In a large bowl, mix the flour and baking powder. Separately, mix the milk, eggs, oil and vanilla. Make a well in the centre of the bowl with the flour and add the wet ingredients. Whisk by hand until mixture is combined. If batter is too thick, add a little extra milk.

Lightly grease your fry pan and heat. Add one ladle of the batter onto the frying pan. As it starts to cook, scatter a few chocolate chips on top and then flip over when ready. Pancakes should be golden.

Serve with your favourite toppings. We typically enjoy berries, Maple Syrup and sometimes Hazelnut Spread. xxx
