A little bit of nostalgia…
Who says you can’t indulge a little while keeping it simple and (mostly) healthy? I’m sharing one of my favourite treats that brings back all the nostalgia of childhood parties but with a deliciously grown-up twist! These healthy(ish) Chocolate Crackles are a breeze to whip up, using just three simple ingredients: creamy peanut butter, rich chocolate, and crunchy rice puffs. Perfect for when you’re craving something sweet but want to keep it on the lighter side. Let’s get cracking!
Ingredients…
- 200g dark chocolate (sometimes I mix it up with a little dark and milk chocolate)
- 4T peanut paste (freshly ground peanut butter is best as it’s nice and soft)
- 40g rice puffs (I use organic brown rice puffs)
- Desiccated coconut (optional)
How to…
Melt the chocolate and peanut butter so they are nice and smooth. Add the rice puffs and mix with a wooden spoon or spatula so they are completely coated. Spoon the mixture into cup cake wrapper and sprinkle with a little desiccated coconut (optional). Pop them in the fridge to set and enjoy!
